You may have many ways to do that. What I do is save them as a text file. To do that, please follow theses steps:

1. Export the messages you want to save to Outlook if you use Outlook Express.
2. In Outlook, select all messages you want to save.
3. Open File>Save As.
4. Type the file name.

Then you will have all saved email in this file.
